My First Shakshuka
Just a quick post today. It’s been a while, and I’ve been cooking a lot, but taking very few pictures. So I’m sharing a rather unimpressive one, but it made for a delicious meal! Hasn’t everyone been talking about shakshuka lately? I feel like it’s on every brunch menu and in every food magazine. That’s not a complaint. I only wish I’d known about it sooner because baked eggs smothered in spicy tomato sauce is something I can really be all about. Isn’t it crazy how some kind of amazing delicious food can exist in the world, and we never hear about it until it becomes and Instagram trend? I’m…

Garlic Hummus with Roasted Jalapeños
I’ve been a little bit obsessed with anything spicy lately, maybe because summer’s here. It feels appropriate. Roasted jalapeño garlic hummus is pretty much the perfect solution. I’ve been consuming it at a truly irresponsible rate ever since I came up with it, and now every trip to the store involves stocking up on chick peas and jalapeños. All summer meals should really involve something on the grill. Charring jalapeños is a low maintenance way to create an excuse to be outside by the grill without needing to set down your wine. I don’t care for activities that require me to set down my wine. Personally, I’m enjoying this…

Restaurant Style Salsa
Summer’s coming fast, and if that doesn’t conjure visions of fresh salsa and Negro Modelo, then you need to do some soul-searching. Where’s your head at? Get in the game. I want to find myself this weekend (and every weekend for the next six months) sitting on a patio somewhere imbibing something cold and refreshing and possibly dipping some corn chips into a delicious pool of fire-roasted tomatoes combined with fresh onions, and cilantro, grown in someone’s garden or at least picked up from the Farmer’s Market. Mexican food of all kinds is at the very top on my list of favorites, and I especially love going to Mexican restaurants where…

Tropical Fruit Salad with Toasted Hazelnuts and Coconut
I literally woke up this morning in the middle of a dream about tropical fruit salad. It started with plantains (which did not make the cut in my real-life salad because they have no business there), but then it snowballed into mangoes and pineapples and toasted hazelnuts, and all sorts of things that I ended up REALLY wanting to eat. And thus, a goal for my day off was born! (Or at least a second goal that would compete for attention with my previously established goals of washing my sheets and taking the dog for a run. I think I can find time for all three… ) Why was I…

Flourless Pumpkin Coconut Cookies
When we have potlucks at work, we always pass around a list so everyone can sign up for something. I’ve been banned from bringing desserts because for some reason, my coworkers are suspicious that I will sneak vegetables into the cookies like a parent trying to trick a kid. And by gosh, they’re not wrong. But if they would just give me a chance, I would knock their socks off! They have no idea what they’re missing! Honestly, it had never occurred to me to combine pumpkin and coconut, but what can I say? My preconceived ideas were proven wrong, and I had my mind blown by how much I love…

Ina Garten’s Beans and Greens
I spent the better part of last year waiting anxiously for the release of Ina Garten’s new cookbook, Cooking for Jeffrey. When I found out it was going to be released ON THE ACTUAL DAY OF MY BIRTHDAY, it felt like I won the lottery. I have historically described Ina as some combination of my culinary soulmate and my spirit animal. Everything she makes is notorious for being done right and being easy to reproduce because of her great instructions. So far, I haven’t proven that theory wrong. My mom anticipated the fact that I would want need this book, and she heroically pre-ordered it for me from Amazon.com. (You too…

Sweet Potato Noodles with Cashew Cream Sauce (Vegan)
I can’t explain the vegan kick lately, but let’s roll with it, it’s good for us. (Unless “paleo” is the real good for us, but no one can answer this question for me… ) I digress. Let’s talk about these sweet potatoes noodles and my first foray into SPIRALIZING!! Yeah, I’m pretty much late to all trends, so this isn’t shocking. I’ve been watching people spiralize their veggies on Pinterest for months now, drooling over the late summer zucchini noodles and squash pappardelle. I hadn’t bothered to put any spiralized veggies on my short list to cook though because 1) I don’t own a spiralizer, 2) I didn’t feel like…
