Pomegranate Pineapple Sparkling Water
The minute the weather gets nice in Ohio, I start to feel like summer is here, and just as quickly I start to worry that it’s passing me by. I just love summer so much, that I sometimes forget to appreciate it because I’m busy worrying about watching it slip through my fingers. It’s the same way I feel on the weekend. I’m SOOOO happy it’s Friday, but by Saturday morning, I’m already starting to lament the fact that time is progressing towards Monday. Or, in the case of summer, I worry that we are progressing towards winter. When I spend a perfect sunny day stuck inside, I silently curse, wondering if there will be many more days like this one? And will I get to enjoy some of them outside?
Good news is, summer hasn’t even started yet. We have 24 more sweet hours of anticipation before we have to start watching the days get shorter and the nights longer. Twenty-four hours to bust out a pen and paper and write up a summer bucket list. Twenty-four hours to celebrate the last day of a spring that really wasn’t half bad. And I shall be celebrating with Pomegranate Pineapple Sparkling Water. (Yes, normally I’d celebrate with wine, but that’s not what this post is about.)
I finally had a chance to put some of that mint from the garden to good use. I filled a glass (stemless wine glasses make me feel like I’m drinking wine at least) with some ice, some fresh mint leaves, and a few blueberries just for good measure.
Next, a little dollop of pomegranate juice.
Antioxidants… and stuff.
And finally, fill to the brim with pineapple sparkling water.
Proceed to relax and soak up the final moments of spring 2017. The sun rises on a whole new season tomorrow…
